I’m a Photoshop teacher, and in order to create evergreen training videos I´m looking how to remove the version info from the Photoshop interface.
Anyone knows how?

I do not believe that is something accessible via UXP.
You could hide the PS version from your videos during post-production by overlaying it with a solid color.
